Ingredients:
- 4 purple corn tortillas
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 cup shredded lettuce
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 4 slices of Swiss cheese optional
- 4 pickle slices optional
Instructions:
Preheat your grill to medium-high heat
Brush chicken breasts with olive oil and season with salt and pepper
Grill the chicken for about 6-8 minutes per side or until fully cooked
Set aside to rest
In a small bowl, combine Greek yogurt, minced garlic, lemon juice, and dried oregano to make the yogurt sauce
Warm the purple corn tortillas on the grill for about 30 seconds per side
To assemble the burgers, place a grilled chicken breast on each tortilla
Top with Swiss cheese if desired, lettuce, tomato slices, and red onion
Drizzle the yogurt sauce over the toppings
Add pickle slices if desired
Fold the tortilla in half to form a burger and serve immediately
