Vegan Pasta Primavera is a delicious dish that is full of fresh vegetables and garlic that smells great. This colorful pasta dish is not only nice to look at, but it's also full of healthy foods. This meal is great for both vegans and non-vegans.
Ingredients:
- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 1/2 cup carrots, sliced
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup nutritional yeast
- 2 tbsp lemon juice
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut until fragrant
Add cherry tomatoes, bell peppers, zucchini, broccoli, and carrots to the skillet
Cook until vegetables are tender, about 5-7 minutes
Stir in cooked pasta, nutritional yeast, and lemon juice
Season with salt and pepper to taste
Toss everything together until well combined
Serve hot, garnished with fresh basil leaves
