Greek Chicken Bowl-Creole Contessa



A fusion dish combining Greek flavors with a Creole twist, featuring tender marinated chicken served with quinoa, fresh vegetables, feta cheese, Kalamata olives, and tzatziki sauce.

Ingredients:

  • 4 chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, sliced
  • Tzatziki sauce for serving

Instructions:

In a bowl, combine diced chicken, olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper

Mix well to coat the chicken evenly

Marinate for at least 30 minutes

Heat a skillet over medium heat

Add the marinated chicken and cook until browned and cooked through, about 8-10 minutes

In serving bowls, assemble cooked quinoa, cherry tomatoes, diced cucumber, sliced red onion, cooked chicken, crumbled feta cheese, and sliced Kalamata olives

Drizzle with tzatziki sauce before serving
