These Korean beef tacos are a fusion of Korean flavors with a Mexican twist. Tender marinated beef combined with spicy kimchi, crunchy slaw, fresh cucumbers, and a squeeze of lime juice make these tacos a delicious and satisfying meal.
Ingredients:
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 cup kimchi, chopped
- 1 cup shredded cabbage
- 1 cucumber, thinly sliced
- 1 lime, cut into wedges
- 8 small flour tortillas
- Salt and pepper to taste
Instructions:
In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, and ginger to create the marinade
Add thinly sliced beef to the marinade and let it marinate for at least 30 minutes
Heat a skillet over medium-high heat and add the marinated beef
Cook for about 2-3 minutes on each side until cooked through
Warm the tortillas on the skillet for about 30 seconds on each side
Assemble tacos by placing cooked beef on tortillas, then top with chopped kimchi, shredded cabbage, sliced cucumber, and a squeeze of lime juice
